Delicious Quinoa Salad
- 1 cup quinoa
- 1 avocado
- 1 cup cherry tomatoes, cut in quarters
- 1/2 large red onion, diced
- 1/3 cup feta
- 1 tsp lemon juice
- 1 cup arugula or baby spinach, chopped
Directions:
Cook quinoa according to package directions. Once cool, add avocado, tomatoes, onion, feta, and arugula or spinach. Add lemon juice to taste. Prepare to become addicted!
