Meat Balls
- 1 lb lean ground beef
- 1 egg, slightly beaten
- 2 cups homemade or lower sodium store bought tomato sauce
- 1/2 cup bread crumbs or 1/4 cup cooked brown rice
- 1/2 cup grated carrot
- 1/2 cup grated zucchini
- Season with pepper
- 1 Tbsp chopped fresh parsley
Makes 18 meatballs
Directions
1. In a large bowl, combine egg, ground beef, 1/4 cup tomato sauce, bread crumbs or
rice, grated carrot, grated zucchini, and pepper. With clean hands, shape into 18
meatballs.
2. Heat a large skillet over medium heat. Spray with vegetable cooking spray. Cook
meatballs until browned on all sides, about 10 minutes. Spoon off any fat. Pour the
remaining tomato sauce over meatballs and bring to a boil. Reduce heat, cover and
simmer, stirring frequently, for 35 minutes or until meatballs are no longer pink inside.
3. Serve meatballs and ladle sauce on top. Top with fresh parsley. Serve with mashed
sweet potatoes, rice, or pasta and a healthy side of vegetables.
