Grilled Chicken and Apple Sandwiches
This sandwich cooks beautifully either on a non-stick skillet or in your George Foreman dual sided grill.
- 1 (12-oz.) can chicken meat, drained
- 1/4 cup (62.5ml) mayonnaise
- 1-1/2 (375ml) cups grated Swiss cheese
- 2 stalks celery, chopped
- 1 apple, finely chopped
- 12 slices whole wheat bread
- 2 tbsp (30ml) soft margarine
Directions:
1. In small bowl, combine chicken, mayonnaise, Swiss cheese, lemon juice, celery and apple.
2. Make sandwiches with the bread. Spread outside of sandwiches with margarine. Grill the sandwiches, covered, over medium heat, turning once, until cheese begins to melt and bread is toasted.
Yields: 6 servings
