Lunch Box Chili Rice and Beans
- 1 cup (250ml) cooked rice
- ¾ cup (175ml) canned kidney beans, drained and rinsed
- ½ cup (125ml) frozen corn
- 1 medium tomato
- ¼ cup (62.5ml) diced green pepper
- 2 tbsp (30ml) finely chopped onion
- ¼ to ½ tsp (1 to 2ml) chili powder
Directions:
1. Combine ingredients and stir until combined. To serve, eat cold or heat in microwave until hot.
